ASIAGO PDO FRESCO (or pressed) is a Protected Designation of Origin cheese and included among the cheeses protected by the Asiago Cheese Protection Consortium. This consortium guarantees that farms, located in a specific geographical area, provide a correct and healthy diet to livestock and that the collection and processing of milk into ASIAGO DOP FRESCO cheese strictly complies with the processing and maturing procedures defined by the specification. The Consortium of Protection also carries out a constant check on the cheeses before being placed in the me rcato to guarantee the consumer and quality.
ASIAGO DOP FRESCO (or pressed) is obtained from pasteurized whole milk and still follows an artisanal process, under constant control of the Master Casaro. The cooking, the cutting of the pasta and other aspects of the processing are in the secret of tradition and have guaranteed a high national and international recognition to the Asiago DOP pressed of the Dairy.
