The Soppressata is the most noble amongst Calabrian sausages because it is obtained by processing the leanest, nerve-free, pork meats, ham and fillet, with the addition of the best lard coming from the front part of the loin. Chopped coarsely and aromatized with Calabrian red sweet chilli, the sausages are bagged in natural pork guts, pierced and hand-tied with natural twine. Time of seasoning of about 45/60 days. They are are gluten- and dairy-free.
