Ingredients: Free range corn-fed chicken
Stuffing: freshly ground pork mince, salt, pepper, garlic, bread, milk, egg, sweet wine, & grated Parmesan Reggiano
Extras: prunes, pistacchio, rosemary & smoked pancetta
Cooking Instructions: Preheat oven to 180 degrees. Place chicken in lightly oiled roasting tray and cover with foil. Cook for 90 min. Take off the foil and cook for a further 30 mins.
